- 2 to 3 pita breads with pockets

- Seasoning of choice (such as za’atar)
- Preheat the oven to 425°F and prepare a large sheet pan without lining it with parchment paper.
- Split the pita pockets in half along the seam to create single rounds of pita bread. If your pita bread is already single-layered, you can skip this step.
- Brush both sides of each pita round with extra virgin olive oil.
