This Mediterranean cucumber salad is bright, refreshing, and made with just a few fresh ingredients and a light citrus dressing. It pairs well with many dishes such as grilled chicken, lemon garlic salmon, beef kabobs, or can be added to shawarma or gyro wraps.
English cucumbers are recommended for this salad because they have thinner edible skin, fewer seeds, and a sweeter flavor. If English cucumbers are not available, regular slicing cucumbers can be used, but it is best to peel their waxy skin.
- 2 English cucumbers, thinly sliced
- 1 to 2 shallots, thinly sliced
- 4 to 6 radishes, thinly sliced
- About 1/4 oz chopped fresh dill
Dressing
- 3 to 4 tbsp extra virgin olive oil
- 2 tbsp white wine vinegar
- Juice of 1/2 lemon
- 1 tsp dried oregano
- Salt and pepper to taste
- Place the sliced cucumbers in a large mixing bowl. Add the sliced shallots, radishes, and fresh dill.
- In a small bowl or jar, combine the olive oil, white wine vinegar, lemon juice, oregano, salt, and pepper. Whisk or shake until well mixed.
- Pour the dressing over the salad and toss gently until everything is well coated.
- Serve immediately or chill briefly before serving.
